I love chinese food, and Special Fried Rice is one of my favorite dishes.
I always want to try and recreate my version of my favorite foods at home – and this was no exception. When I had some leftover chicken and ham I decided Special Fried Rice was the perfect dish to use them in.
This is obviously not a genuine Chinese recipe….because I made it up all myself! However, I was more than happy with the results and I wanted to share this ‘better than takeout’ meal with you all.

For the sauce:
3 Tbsp ginger teriyake sauce
1 tbsp fresh ginger
2 tbsp chili garlic paste
3 Tbsp sesame oil
4 Tbsp coconut oil
1 tsp coriander
2 tsp ground ginger
1 Tbsp minced dried onion
1 Tbsp chives
1/2 tsp red pepper flakes (optional)
For the fried rice:
1 small red onion, slivered
4 cloves garlic, diced
6 oz broccoli
5oz frozen peas
1 C cooked ham, diced
2 C cooked chicken, diced
1 C brown rice (uncooked weight)
In a large pan cook the brown rice following the instructions on the packet.
In a measuring cup, mix together all the ingredients for the sauce and whisk until combined.
In a wok, add the sesame and coconut oil, onions and garlic and cook until soft
Add the sauce to the wok and stir. Cook for a few minutes to release the flavors.
Add the peas and broccoli and stir so the sauce is coating all the vegetables
Add the diced ham and chicken and cook until the meat is hot
Add the cooked rice to the dish and stir, reduce the heat and cook for a further 3 minutes
Make a well in the middle of the ingredients and add the whisked eggs into the well.
Increase heat and stir all the ingredients together, making sure the egg is thoroughly cooked.
