Gluten-Free Apple Cranberry Crisp

I am a huge fan of Apple Crisp!

It’s one of my all-time favorite desserts.  I decided to try this winning combination of apples and cranberries as a bit of a twist on a classic dish creating the perfect Apple Cranberry Gluten-Free Crisp.

I also don’t usually eat gluten-free but I have many friends who need to – so to make sure they were able to eat a delicious dessert when they came for dinner I developed this incredible gluten-free crisp topping.

This is a great dish to make for a large party or group event as it serves 10-12 servings.

Ingredients (Serves 10-12):

1 C walnuts, finely chopped

1 C oats, ground to a medium consistency

1/2 C oats, whole

1/2 C golden flaxseed

1/2 C Quinoa

1 C brown sugar

1/4 C butter, room temperature

Apple Cranberry filling:

5 lbs apples, peeled, cored and sliced thinly

1 1/2 C fresh or thawed frozen cranberries

3/4 C brown sugar

1 tsp cinnamon


To make quinoa flour:

Add 1 C quinoa into a skillet and toast for a few minutes on medium-high heat moving it around the skillet occasionally.

You will heat the quinoa start to ‘pop’, continue to cook for a couple more minutes until some of the quinoa starts to change color. Remove from heat and allow to cool, then grind in a food processor, Vitamix or coffee grinder until fine like flour.

1 cup quinoa flour = I cup regular flour

To make the Gluten-Free Crisp topping:

Chop the walnuts in a food processor and add to a bowl, do the same with 2 C oats and add to the bowl, also add in the flaxseed and 1 C of additional oats.

Add the butter, and using a pasty cutter work the butter into the dry ingredients until you create crumbs.

To make the Apple Cranberry filling:

In a medium-sized pan add the sliced apples, cranberries, brown sugar, cinnamon and cook until the apples are soft and the cranberries start to burst open and soften.

Pour the mixture into an ovenproof dish

Add the crumb mixture onto the top of the filling spreading it out evenly over the entire surface.

Bake at 350F for a minimum of 20 minutes, or until the crumb topping is golden brown.

Serve immediately with whipped cream, vanilla ice-cream, vanilla yogurt or my personal favorite, British custard!!!!
