Mozzarella Stuffed Burgers with all the trimmings!

We are kicking of this new season with one of our favorite dishes of the summer – and what better day to celebrate our return but with Mozzarella Stuffed Burgers with all the trimmings this Labor Day!

Traditionally, Labor Day marks the end of the summer with the last BBQ before the Fall weather begins…..but here in California we will probably be grilling for a few more months this year and today the weather is just shy of 100°F!

This year we are praying in some rain and Fall-like weather – I long for some cozy Fall afternoons snuggled on a couch drinking a pumpkin spice latte while the rain pours outside! Please God let this be the year!

In the meantime I wanted to share this recipe for Mozzarella Stuffed Burgers with all the trimmings – this has been a regular visitor in our house this summer! We always like to find new uses for freezer staples such as ground beef and ground turkey and this was one of those perfect solutions.

Ingredients:

Makes 2 extra-large (or 4 regular) burger patties

1lb ground beef

2 tbsp garlic salt

1 tsp black pepper

1 tsp paprika

1 tsp smoked paprika

1 1/2 tbsp basil

1/2 tsp ground mustard

2 thick slices mozzarella cheese

Trimmings:

Bread rolls or Iceberg lettuce leaves

2 oz sliced mushrooms

1/2 red onion, sliced

1 avocado, sliced

mustard/mayo/ketchup – optional

Directions:

In a bowl add the ground beef and seasonings and mix well.

Divide the ground beef into 2 or 4 balls and form burger patties using your hands.

Make a small indent in the center of the burger making sure not to go all the way through the patty.

Insert the mozzarella slice into the indent (you may need to cut the cheese into smaller pieces)

Cover over the indent with the ground beef making sure the cheese is completely covered in a think layer of meat.

Place in a hot pan and cook for a few minutes and then turn over, repeat this step until cooked thoroughly.

In a separate pan, cook the onions and mushrooms until soft and set aside.

To assemble the burgers:

For a burger in a bun:

Place the cooked patty on the bread, add the onions, mushrooms, lettuce, avocado and any additional garnishes.

For a protein style burger (no bread):

Place 3 iceberg lettuce leaves on a plate so that they are overlapping, place the patty on top of the center leaf and then add the onions, mushrooms and avocado, and any additional garnishes. Wrap the patty in the lettuce and secure (if necessary) with a toothpick.

Sloppy Sausage Subs

Sloppy Sausage Subs are a fast, simple dinner that’s perfect for kids and adults alike!

These are an incredibly messy, but delicious dinner alternative when you need something quick and simple!

The melted cheese, the sloppy sauce, the spice from the sausages combined makes for a delicious combination that will satisfy many an appetite!

If you want a slightly less messy version serve them open-faced with a knife and fork…..I opted for this option as the sub was huge and too big for me to bite! Either way, it tasted great and hit the spot!

Ingredients:

1 red bell pepper, sliced

5 Italian sausages (hot, mild, sweet)

1/2 red onion, slivered

1/2 white onion, slivered

5 cloves garlic, sliced

6-8 mushrooms, sliced

Any red pasta sauce – we used our Spicy Pasta Sauce recipe

2 tbsp red wine (optional – you could use water instead)

1-2 sub bread rolls per person

sliced cheese

Directions:

Partially cook the sausage, until its a little brown on the outside and firm enough to cut into 8 pieces per sausage

Add the sausage to a large pan on medium-high heat.

Add the onion, garlic, bell pepper and mushrooms and cook for about 5-7 minutes or until the vegetables are at your desired softness.

Add the red wine (or water) and continue to cook for another minute.

 

Meanwhile, warm up the pasta sauce in a separate pan

 

Preheat oven to 350°F.

Cut the bread rolls in half and place on a baking tray.

Add pieces of cheese to the bread and warm in oven for a few minutes until the cheese melts.

 

Add the sausage mixture to the bread

 

Add the sauce on top of the sausage mixture and serve!

 

 

Salt & Pepper Beef Skewers

Captain America made us a delicious dinner-Salt & Pepper Beef Skewers.

We had some stewing beef cubes – but with the weather warming up we wanted something other than stew! Captain America came up with this delicious, simple recipe which makes a great alternative for stewing beef.

We added garlic, red bell peppers, purple onions and mushrooms for added flavor and color but you could play around with it and add whatever vegetables your family like the most. Be creative – that’s the fun part of cooking!

I hope you like our Salt & Pepper Beef Skewers as much as we did! Enjoy!

 

Ingredients:

1 1/4 lbs cubed beef

For the seasoning:

1 tsp paprika

1 tsp mustard

1 tsp black pepper

2 tsp garlic salt

1 tsp lemon juice

To assemble the skewers:

wooden skewers

purple onion, in cubes

mushrooms, whole

garlic cloves, whole

red bell pepper, cubed

Directions:

Mix the seasoning in a small bowl.

Wash the beef and pat dry with paper towels.

Put the pieces of beef in the seasoning and make sure all the meat is well seasoned.

To assemble the skewers:

Place all the ingredients alternately on the skewers.

Cook on a medium-high grill for about 20 minutes, rotating regularly.

Cook until the beef is fully cooked but still tender.

Beef Brisket & Vegetable Stew

I recently made this hearty Beef Brisket & Vegetable Stew.

In England, we eat a lot of hearty stews, soups and casseroles – but rarely does Californian weather inspire me to cook such dishes!

Despite the warm spring Californian days, I wanted something hearty and meaty for dinner and this beef brisket and vegetable stew hit the spot.

It takes a while to cook but is very simple! If you like to cook in the crock-pot then I’m sure this would be a perfect dish to start and leave, otherwise, it takes about 20 minutes preparation and then you leave it to do its thing!

Ingredients:

Serves 4-6

1 lb beef brisket or chuck roast

3 large carrots, peeled and diced

4 white potatoes, peeled and diced

1 sweet potato, peeled and diced

1 medium onion, sliced thinly

6oz mushrooms, sliced

1/2 red cabbage, diced

5 cloves garlic, crushed

2 tbsp garlic salt

1 tbsp brown sugar

1 tsp cinnamon

2 tsp celery salt

1 tsp black pepper

1 tbsp Italian seasoning

1 tbsp oregano

1 tbsp basil

1/2 tsp red chili flakes

1 tsp hickory flavor liquid smoke

1 tsp paprika

4 C water

2 tbsp gravy granules

Directions:

In a large pot, sear the beef with the onion and garlic over high heat. Turn the meat frequently until it is browned on all sides.

Add carrots, white potatoes, sweet potatoes and 4 cups water to cover and bring to a boil. Reduce heat to a steady simmer and cook for approximately 1 hour, or until meat is tender enough to pierce with a fork.

Add the mushrooms, red cabbage and the rest of the seasonings (except the gravy) and stir. Continue to cook at a steady simmer for another 30 minutes.

Add the gravy granules just before serving to make rich meaty gravy.

Serve with crusty bread.

Dairy Free Leftover Lamb Stroganoff

We LOVE lamb! Especially roast lamb!

We recently had some leftover and wanted to make a delicious dinner using the leftovers. Dairy-free leftover lamb stroganoff was born!

You may remember from a few weeks ago our recipe for Dairy-Free Chicken Stroganoff well this turned out even better!

This is the same recipe except using the leftover roast lamb. It was even more delicious than the chicken stroganoff – and that was amazing! This is the ultimate dish for leftover lamb and it is so simple to make!

I love the fact that it takes a classic dairy dish and makes it dairy-free – as you know Captain America cannot eat dairy (except cheese….weird we know!) With this recipe he doesn’t miss out and doesn’t have to worry about any adverse side effects!

We served this dish with the classic pasta noodles on the side but you could serve it with crusty bread or potatoes for an alternative.

Ingredients:

1 white onion, slivered

1lb roast lamb, cut into chunks

4oz mushrooms, sliced

2 tbsp coconut oil

1 1/2 C beef broth (or lamb stock)

4 tbsp flour

1 C rice milk

3 tsps Dijon mustard

2 tbsp Worcestershire sauce

1 tsp rosemary

1 tsp thyme

1 tsp dill

1 tsp smoked paprika

1 1/2 tsp paprika

1 tsp black pepper

1 tbsp parsley

1 tsp garlic salt

Directions:

Place the cubed lamb and onions in a pan and cooked on a moderate heat until the onions begin to soften.

Make a small hole in the center of the meat and add the coconut oil and cook until it melts.

Then add in the flour and stir into all the meat. Cook for 2 minutes.

Gradually add in the beef/lamb stock, stirring constantly.

Gradually add in the rice milk and continue stirring until a thick sauce is formed.

Reduce the heat to a simmer.

Add in all the seasonings and mushrooms. Stir well. Simmer for a further 10 minutes on low heat.

Serve with pasta noodles

Homestyle Breakfast Potatoes with Bacon

Captain America and I LOVE breakfast!

It’s probably my favorite meal of the day! We love to eat breakfast out at some of our favorite restaurants and we love to cook it at home on a rare lazy day off.

We made these delicious homestyle breakfast potatoes on a recent day off – they were a huge success and are now added to on of our favorite breakfast recipes.

I am a huge fan of potatoes, as many of you know, so this was a likely winner from me from the outset. I love hash browns and homestyle breakfast potatoes as a rule, but one thing I don’t love is bell peppers added to my potatoes! Don’t get me wrong I love a good bell pepper, but not with my homestyle breakfast potatoes!

Homestyle Breakfast Potatoes with Bacon

We made ours with bacon…..because bacon and breakfast just go together! Some would even say that breakfast isn’t breakfast without bacon. We love bacon but hate it when the smell permeates our whole apartment – this was a perfect solution! Delicious bacon without any of the residual smell!

Ingredients:

Serves 2 people

3 large potatoes, diced

olive oil

2 tbsp butter

1/4 white or yellow onion, slivered

1/4 tsp smoked paprika

1 tbsp parsley

2 tsp chives

2 tsp dill

1/2 tsp onion salt

1/2 tsp garlic salt

2 sliced bacon, chopped into bite-sized pieces

red chili flakes (optional)

Directions:

In a large pan, add the olive oil, butter and potatoes. Toss the potatoes in the oil and butter.

Cook on a medium-high heat for a few minutes to soften.

Homestyle Breakfast Potatoes with Bacon

Add the onions, all the seasonings and cook for another couple of minutes.

Add the bacon, stir and cover. Reduce the heat and cook on a medium heat for 5 minutes, stirring occasionally.

When the potatoes begin to soften, but before they get mushy, remove the lid and turn the heat up to ‘fry’ the potatoes until they start to crisp.

Easter Sunday has been and gone – and if like us you have leftover lamb you NEED to make our Leftover Lamb Burgers with Fresh Raita!

This is the best solution for leftover lamb – it’s delicious, quick, easy, fresh and a total alternative to anything you ate at Easter (or any other time of the year that you ate lamb!)

Leftover Lamb Burgers with Fresh Cucumber Raita

Captain America and I LOVE lamb – it is our favorite meat so we are always looking for ways of being creative with it.  We don’t eat it very often as it’s so expensive, but after Passover and Easter we often have lots of leftovers – because we are so good at over catering!

This Leftover Lamb Burger with Fresh Raita recipe is a personal favorite – we were very proud of our creations and can’t with until next year so we can eat it again!

I love the addition of the fresh raita! Unfortunately Captain America couldn’t eat it as it contains dairy and he is allergic – so he had to take my word for it……it is the PERFECT addition to this dish, so unless you are allergic to dairy too don’t miss it out!
