Captain America made this soup – it’s one of his favorites.
If you are experiencing cold, wintry weather right now and are looking for a perfect, warming soup recipe then look no further – this is it! This is more like a stew than a soup – so it makes a great main meal too!
This is a very simple recipe – just throw it all in the pot and let it sit for a couple of hours
Ingredients:
2 packs of dried 15 bean soup mix – including the seasonings packets
2 large yellow onions, diced
3 tbsp parsley
1 tbsp smoked paprika
pinch of onion salt
2 tbsp garlic salt
1/2 tsp cayenne pepper
1 tbsp chili powder
4 tbsp lemon juice
1 6oz can tomato paste
1 14oz can diced tomatoes
6 cloves garlic, crushed
4 cups cooked ham/Andouille sausage/Ham Hock/bacon (or any fatty, salty pork meat , diced into cubes
1/2 tsp baking soda
Directions:
In a large pot, soak both packets of beans in water and the baking soda and leave them overnight.
Drain the water and rinse the beans thoroughly.
Put the beans back in the (clean) pot and add 8 quarts of water and the seasoning packets that were included with the beans.
Add all the additional seasonings
Add the onions, tomato paste and pork.
Put a lid on the pot and bring to the boil then reduce the heat to a low rolling boil and remove the lid.
Cook for around 45 minutes, reduce the heat again to a simmer, place the lid back on and cook for a further hour or so until the beans are soft.
Serve and enjoy!
