My very first ever blog post was a recipe for Mushroom soup!

I was nervous about it, scared to write my first blog post, and clueless about anything to do with blogging!

A year later, and I write recipes all the time – some we create from scratch, some we adapt and some we keep just as they are because they are already incredible (and give full credit to the genius who created them of course!).  I have also adapt and ‘perfect’ my own recipes – just like this one for Mushroom Soup.

As winter (well as near as this part of California gets to winter) comes to its peak I like to make soup – lots of soup. A big favorite is my Butternut Squash Soup, but to take a break from that I like to make Mushroom Soup.

I love this version of the soup enough to rewrite it here! I hope you enjoy it!

3lbs Mushrooms, chopped (any type you fancy!)

1 Qt Chicken Stock

1 Large onion, diced

10 cloves of garlic, diced (my hubby is Sicilian so everything has garlic in it!)

Approx 1/2 C sherry

2 tsp thyme

Few drops of Liquid Smoke-Hickory flavor (optional)

Few drops of Balsamic Brandy Glaze or balsamic vinegar (optional)

Salt & pepper to taste

A little oil for the pan


In a large pan, add the oil, onions and garlic and stir until softened but not browned (around 5 mins)

Add the sherry, thyme (and optional ingredients) and mushrooms and stir

Add the chicken stock and stir

Make sure all the ingredients are covered by water, additional water can be added if required
Simmer on a moderate heat for an hour
Allow to cool slightly and then blend in a food processor/blender/Vitamix. I did this amount in 2 batches.
Pour into bowls and serve immediately with warm crusty bread! Enjoy!
