Chicken Tortilla Soup

We are on a total soup kick right now!

Captain America is on a roll with his soup making skills, and this is yet another outstanding recipe he has adapted!

Apparently, this a huge hit with many of Captain America’s friends, with some even claiming it is “the best Chicken Tortilla Soup they have ever tasted”.  I love it too, but we will let you judge!

This makes A HUGE amount of soup – it s a double recipe – and serves 10-14 portions depending on how hungry/generous you are. If you like your soups more brothy, then add a little extra water either when cooking or when you reheat it.

Ingredients:

1/4 C olive oil

3 corn/wheat tortillas, shredded into bite-sized pieces

10 garlic cloves, crushed

2 tbsp fresh cilantro

11 chicken bouillon cubes

5 beef bouillon cubes

4 Qts water

2 large onion, diced

4 x 16oz can diced tomatoes

1 medium can diced green chillies

2 x 6oz cans tomato paste

2 tsp cumin

2 tsp chili powder

2 bay leaves

1/2 tsp salt

1/2 tsp cayenne pepper

3.5 C boneless & skinless chicken pieces, diced

For the garnish:

8 tortillas, sliced into thin strips

cooking spray

salt

cilantro

jack cheese, grated

cheddar cheese, grated

avocado

Directions:

In a large pan, add the olive oil and the diced chicken and cook on a high heat until the chicken begins to brown.

Add the onions, garlic, tomatoes, diced chillies and cook for a further 4 minutes until the onion softens.

Add the spices, and then the water and the chicken and beef bouillon cubes, stir and then add the tomato paste.

Cook for a further 5 minutes, then add the shredded tortillas.

Cook on a rolling boil for about one hour, ensuring the ingredients do not stick to the bottom of the pan.

To prepare the garnish:

Spread the sliced tortillas on a large baking tray, spray with cooking spray and then sprinkle with some salt.  Bake at 350°F for 15 minutes  until golden brown. Set aside until you are ready to serve.

Chicken Tortilla Soup

Garnish the soup with the tortilla strips, grated jack and cheddar cheese, diced avocado and fresh cilantro! Delicious!
