Captain America makes a delicious Sicilian Meat Sauce.
It is an adaptation on a family recipe that has passed through generations.
Apparently, there is no definitive recipe, each person takes the ‘original’ and adapts it to suit their tastes. This is Captain America’s version of his Mom’s recipe, that she adapted from her Mom, but her sister’s version was totally different…..and if you can follow that you are better than me!
I love it! It’s rich, hearty and meaty….with a little kick of heat (which you can chose to add or not!)
The other joy is that it stores well in the refrigerator or freezer, so is a great option for those of you who like to cook in advance and freeze for a later date.

Serves 10-12 generous portions
1/2 C olive oil
12 cloves garlic, diced
1 large yellow onion, slivered
3 tbsp oregano
3 tbsp italian seasoning
4 tbsp parsley
2 tbsp basil
2 tsp ground black pepper
1 tsbp onion salt
1 tbsp garlic salt
10 white mushrooms, sliced
10 Crimini mushrooms, sliced
3 15oz cans tomato puree
3 15oz cans tomato sauce
3 6oz cans tomato paste
2 lbs ground beef
6 pork sausages
6 spicy pork sausages
2 bay leaves
pinch chili flakes
1/2 tsp tabasco sauce
Pasta (cooked following instructions on the packet)
In a very large pan, cook the oil, garlic and the herbs for a couple of minutes to release the flavors.
Add the onions and cook until the onions begin to soften
Add the ground beef and cook until browned.
Drain any excess liquid from the meat and onions.
Add the tomato paste first, then stir. Add the tomato sauce and puree. Add 2 cans of water and stir.
Add the mushrooms. Cook on medium-high with the lid on. Allow the sauce to reach a rolling boil, then reduce heat and simmer for 30 minutes
Meanwhile, in a frying pan cook the sausages until they begin to brown on the outside. They do not need to be cooked at this point as you will add them to the sauce later.
After the sauce has simmered for 30 minutes, add the sausages and simmer for a further 45 minutes, stirring occasionally.
Serve over a pasta of your choice with a sprinkling of parmesan cheese
