Our 30-Minute Recipe series continues today with Cobb Salad.
This is so simple and so quick it barely even constitutes a recipe – we are really just preparing and assembling ingredients! As the summer draws to a close (sigh :-() let’s make the most of the wonderful warm summer days and nights and make the most of the opportunity we have to eat salad in the sunshine!
This is fresh, light and a perfect alternative to a heavy, rich meal.
You can adapt this recipe anyway you wish…….be creative, explore new ingredients, try something new!
I stuck to a more traditional Cobb Salad here but I usually try and steer clear of too safe and traditional when it comes to food as you often miss out on the good stuff!
Take a large flat bowl
Wash and chop some lettuce – I used Romaine for crunch and mixed leaves for texture and color.
Dice some tomatoes and cucumber and add to the bowl creating a ‘spindles on a wheel’ shape (if you want the more traditional Cobb Salad look), add some shredded/grated carrot
Dice some cheese – I used Monterey Jack, add diced cooked ham and turkey, assembling following the wheel shape, as shown.
Add some black olives, and sliced hard boiled eggs and finish with sliced avocado
And there you have it! Cobb Salad in less than 30 minutes! As you can see my ‘wheel’ shape disappeared fairly quickly as I had more food than would fit in the bowl……too much food is always a problem around here……but I think the final salad still looks amazing and delicious!

Ruth, this cobb salad looks awesome! I love the cubed ham (I just adore ham). Anything with avocado makes me smile. I would love to eat this, especially if it was doused in a tangy blue cheese dressing 🙂
