Captain America had a craving for Blondies [insert joke about him marrying one!]
He never craves sweet things, and is allergic to most dairy products and all chocolate, except white-hence the development of White Chocolate, Coconut & Blueberry Blondies!
I have never made Blondies before, so I set about on Pinterest searching for a recipe, which I found on Deliciously Yum. I then adapted it and added our favorite ingredients to make White Chocolate, Coconut & Blueberry Blondies.
I would like to tell you they were a huge success, that Captain America’s sweet tooth was satisfied and all was well in the world…..however, apparently, as of this recipe, Captain America claims he dislikes dried fruit in dessert items (although his favorite cookies are my White Chocolate Cranberry Oatmeal Cookies), so I found him i the kitchen devouring the Blondies after picking out the blueberries! Yes, really, I wish I was making this up!
I have since declared that I will never try and make him the perfect sweet treat ever again, because every time I do he is never quite satisfied! All the more for me!
In spite of all of this, the White Chocolate, Coconut & Blueberry Blondie recipe was a huge success-just not with Captain America!
Ingredients
1/2 C (1 stick) unsalted butter, melted
1 C packed light brown sugar
1 egg
1 1/2 tsp vanilla extract
1/2 tsp kosher salt
1 C all-purpose flour
1/3 C unsweetened shredded coconut
1/3 C dried blueberries
1/3 C white chocolate chips
Directions:
Preheat oven to 350 degrees F and line an 8-x-8-inch baking pan with parchment paper that has been sprayed with nonstick cooking spray or grease the pan thoroughly.
In a medium bowl, mix butter and brown sugar.
Add egg and vanilla and mix until incorporated.
Stir in salt and flour until fully incorporated and no lumps remain.
Mix in chocolate chips, coconut and blueberries.
Pour batter into prepared baking pan and top with more blueberries and chocolate chips.
Place in the oven and bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
Let cool and cut into squares.
Blondies will keep up to 1 week stored in an airtight container in your fridge or for up to 3 months in the freezer.
These blondies have my favorite ingredients…. white chocolate and blueberries ~ OK let’s put in the coconut too! (Sharon)
