Tuna Pesto Melt

Are you like me and always looking for that quick lunch on the go?

Then look no further – this is the perfect solution!

I love a good Tuna Melt…..but I cannot bare the celery that is usually found in them in the US.  I developed this recipe to fulfill my craving for a Tuna Melt but without any nasty celery!!

It is so so simple…..and it doesn’t even take 30 minutes….more like 10!

Ingredients (to make 2 sandwiches):

4 x slices Sourdough (or equivalent) bread

1 x can tuna, drained ( 1 can should make 2 sandwiches)

3 tbsp fresh pesto

6 slices Monterey Jack cheese

3 tbsp butter, melted

Here’s what you need to do:

In a small bowl, mix the drained tuna and pesto; then taking one piece of bread spread the tuna pesto mixture all over the bread.

Add the slices of cheese, covering all the tuna

Spread the melted butter all over the other piece of bread, ensuring it is on the side of the bread that will be on the outside.

Place that piece of bread, butter side out, on top of the other and flip over and place butter side down in a hot skillet.  

Then butter the other piece of bread that should now be facing up in the skillet

Cook for a couple of minutes on a medium-high heat, then carefully flip it over and cook for a further 2-3 minutes until it is golden brown.

Serve immediately with a side salad
