30-Minute Meals: Shrimp Arrabiata

Shrimp Arrabiata

Here is a yet another really quick and easy dinner recipe that you can throw together in minutes.

One of the joys of being married to a Sicilian is that he grew up around traditional family recipes, and after studying in Bologna for a season he actually learned this recipe while living there……this is the US adaptation obviously – however the roots are there!

This is so simple, I barely had anything to photograph……but there’s what you need to know:

Ingredients:

1 tbsp chili paste

1 tbsp olive oil

4 cloves garlic, thickly diced

pinch of salt and pepper

1 14oz can diced tomatoes (reserve most of the juice)

40z spaghetti or linguine

1 x 15oz can tomato sauce

1 x 6oz can tomato paste

1 tbsp basil

1 tbsp parsley

1 C roasted red pepper and tomato soup

1/2 tsp red pepper flakes

2 C medium shrimp (pre-cooked or raw)

1/3 C parmesan cheese

Directions:

In a large pan, cook the pasta following the manufacturers directions.

In a large skillet, add the olive oil, chili paste, seasonings, garlic and diced tomatoes, cook on a medium heat and cook until the sauce reduces a little.

Add the tomato sauce and soup, stir and continue to cook for a further 5 minutes.

Add the reserved sauce, shrimp and parmesan cheese and cook until the shrimp turn pink and are firm to the touch (if using raw shrimp) 

Pour sauce over the cooked and drained pasta and serve immediately.
