Thai style Mahi-Mahi stir fry

Captain America made Thai Style Mahi-Mahi Stir Fry for dinner a few weeks ago.  He is excellent at putting together delicious dishes, from scratch, without a recipe.  I take the pictures and write everything down while he creates!

I love that I married a man who loves to cook as much as I do.  Our styles are very different – I love to bake and he hates it.  He uses LOADS of ingredients and I like to use just a few to keep it simple.

Together we make wonderful, delicious food 🙂

I hope you enjoy this dish as much as we did!

Ingredients:

1 tbsp sesame oil

1 tbsp vegetable oil

2 tsp oyster sauce

1 tsp fish sauce

1/2 tsp chili paste

pinch red pepper flakes

1 tbsp soy sauce

1 tsp dried ginger

a pinch black pepper

a pinch celery salt

a pinch onion salt

2 tsp chives

1 tsp coriander

3 cloves garlic, chopped

1 white onion, sliced very fine

8oz zucchini, chopped

2oz mushrooms, sliced

120z mahi-mahi, washed and chopped into cubes

5oz snow peas

2 oz spinach

5oz grated carrot

small spring of fresh cilantro, chopped

1 C fresh basil

Directions:

Add the first 15 ingredients into a wok first, cook on a medium heat for one minute.

Thai Style Mahi-Mahi Stir Fry

Add the rest of the ingredients (except the fresh herbs) and cook on a high heat until the fish and vegetables are tender – approximately 5 minutes.  Add the fresh herbs and cook for another minute.

Thai Style Mahi-Mahi Stir Fry

Remove any excess liquid before serving.

Serve over brown rice and sprinkle with peanuts.
