This week’s 30-Minute Recipe is Shrimp Kebabs. These make the perfect summer evening meal and are very quick and easy….so simple there is almost no need for a recipe at all!!
You can be really creative with these adding various vegetables or even trying them with chicken or steak instead of shrimp. We used the vegetables we already had available-zucchini, mushrooms and red onion and it made for a delicious combination!
You could even use pre-cooked shrimp and they would need to cook for even less time 🙂
20 Medium shrimp
1 zucchini, sliced into thick slices
10 whole Mushrooms
1 small red onion, cut into large chunks
2 tbsp Lime flavored olive oil
A little salt & pepper
4 metal skewers (use wooden ones of you don’t have metal!)
Wash and drain the shrimp and place in a small bowl.
Add the olive oil, salt & pepper to the bowl and stir.
Make up the skewers alternating the red onion, zucchini, mushrooms and shrimp – you can do it in any order you wish…be creative.
Grill on a medium heat for approximately 10 minutes until the shrimp is cooked and the zucchini is slightly softened. Keep a close eye on the grill as they can cook very quickly.
We served ours with Grilled Corn
